Fresh Weekend Dinner at the Garden

Our friends the Tennants treated us to some pizza for dinner (since we had been feeling under the weather, thanks!), so we decided to bring it down to the garden, and try out our friend Annie's Waldorf Salad recipe to go with the pizza.

We pre-made the dressing at home, and picked the dino kale when we arrived, rinsed it off, and ate it on the spot!

The ingredients we brought from home.
Annie's Kale Waldorf Salad Recipe
4 Cups of packed finely chopped raw kale, preferably Dino Kale
1 large red apple
1 cup of thinly sliced celery
1/2 cup of walnuts, toasted and chopped, divided
1/4 cup plus 2 tablespoons of raisins
2 tablespoons of dijon mustard
2 tablespoons of water
1 tablespoon of red wine vinegar
1/8 table spoon of sea salt
Notes:  Place kale in a large bowl.  Add half the apple to kale along with celery, 1/4 cup of walnuts and 1/4 cup of raisins. Put remaining in a blender along with remaining 1/4 cup of walnuts, remaining 2 tablespoons of raisins, mustard, water, vinegar and salt.  Puree until well combined and slightly thick, adding water if needed to thin.  Pour dressing over kale salad and toss to combine.
